產(chǎn)品介紹

卡拉膠是從紅藻類的細(xì)胞壁中提取的粘多糖。它們是陰離子的線型聚合物,是由具有一個(gè)(κ),兩個(gè)(ι)或三個(gè)(λ)硫酸鹽的二糖單元的α-1,1,3,4β-半乳聚糖組成。在離子溶液中,κ-和ι-角叉菜膠成螺旋結(jié)構(gòu)的自交聯(lián),從而形成剛性或柔性凝膠, λ-角叉菜膠不形成螺旋,屬非凝膠。角叉菜膠作為增稠劑和穩(wěn)定劑是用于商業(yè)化。
